I made this video a few years back and I misspoke on the first scentence of that video. Of course it went pretty viral (8.4 million views to date) so now I have to live with the fact that I said "mushrooms are not vegetables" (they are) when I meant to say "mushrooms are not plants" (they aren't). What makes mushrooms so resistant to overcooking as opposed to most plants is that they're made out of chitin as opposed to cellulose. It's actually kind of similar to keratin (which is a protein in your hair). It's also found in the exoskeleton of bugs, crabs, and lobsters. It's pretty much digested in our bodies as fiber though. Regardless of all this mushrooms are considered a vegetable, which is just a culinary term. And finally -- I can't believe I have to actually say this, but it is one of my most common comment on any mushroom video I make -- mushrooms are completely vegan on their own. A restaurant line cook once told me "You have to cook mushrooms like you're trying to kill them, but then have a last minute change of heart." He was talking about exactly this, cooking out all that water and getting them really searing, then rescuing them with the butter, wine, cream, etc. Great advice.
I’ve been cooking mushrooms a lot lately. I’d add oil and all of sudden it has disappeared. I’d add oil two more times to my already cooking mushrooms. I honestly didn’t know this was the reason, thank you so much for this video❤️

I love salting them pretty heavily to help the water cook out until they're pretty dark and adding white wine, always delicious especially with a ton of black pepper

Im so glad I came across this video. I used to hate mushrooms, avoid them in all cooking and all dishes. I don’t know what happened to me, but I was 2/3rd of the way into a deployment, and out of nowhere I just became a mushroom fiend. I had to eat them every day. An entire scoop, for multiple meals a day. And now, I’ve chilled out about it (I have no idea what came over me) but I’d like to eat them more. Thanks for providing me with such a good place to start

Oh my God, thank you!!! Finally someone who understands how to cook mushrooms correctly!! It is so important to cook mushrooms without oil at first because if you add oil in too early the mushrooms will taste bad and the texture will be gummy

When he says "they are full of water", we're talking like.. 90% water content. So you really have to be patient when sautéing them. If you're doing a larger batch, don't be surprised to see a LOT of juice on your pan / flat-top / whatever you're cooking on. Just save your seasonings until after the juices are gone or you'll end up needing a lot more seasoning than you realistically should. Phenomenal advice in this video, mushrooms are sooo good man
This just helped me so much and you explained it so simply.... I'm a fairly good cook I'm a stay-at-home mother so I'm constantly cooking something but could not for the life of me figure out why every time I cooked mushrooms they would keep the dirty raw taste no matter how long I cook them now I realize it's because I wasn't cooking the water out before adding other ingredients.❤❤❤ Thank you so much

Dried porcini- turned into powder- cook some onions in butter until they turn translucent- add the dried porcini- cook out for a min or two - add veggie stock - reduce for around ten mins - then add vinegar- cook for 2 mins - serve with steak - and zucchini horseradish salad - its best gravy ever and my go to xxx ❤❤❤
In theory I was already aware of this but it was nice to see it action with the blow torch. This was also a good reminder that I need to mess around with mushrooms more

I LOVE mushrooms, but I couldn't understand why they would taste weird when I cooked them yet would taste magnificent in the restaurants. I just brought a carton of "gourmet mushrooms" to include Baby Bella. Shiitake. Oyster. I can't wait to try this method tonight when i cook them. Thank you for this! 😊
