Black vinegar is SO good. It's also great in marinades and in cucumber salad. If you haven't tried it before, think a malt vinegar with the aged richness of a balsamic vinegar, and a hint of umami

OMG I'm so happy you mentioned the mushroom oyster sauce because my bf can't eat oysters for religious reasons, and oyster sauce is one of my favorite things to cook with. I can cook my favorite meals for him now!!! THANK YOU SO MUCH DUDE!!! 🤍

Thank you for specifically pointing out the different kinds of vinegar, lots of people don't realize that you can't always substitute just any old vinegar in a recipe! Rice wine vinegar is MUCH lighter in taste than, say, apple cider or distilled white vinegar. (I learned this the hard way)

I would really love if you could do more shorts talking about stuff that you would include in an Asian / Pacific Islander pantry. I've been making a lot of Asian Caribbean infusions but I can never seem to have the items necessary for a lot of the Asian side Cuisine so a continue to short series shopping list would be much appreciated. 😊❤

I like to keep aromatics like ginger, lemongrass, turmeric and (peeled) garlic in easy reach in my freezer drawer. They're usually used in small, grated portions, so I don't worry about thawing and shave off or chop what I need and put them right back.

Just as a note - Different brands have different tastes for the same item so make sure you try a smaller bottle before getting a gallon jug of something.

Lived in China for 6 years, and this reminded me of how much I miss going to the food streets at night and trying out all the different street foods and restaurants. I can't live without these ingredients and a few more now.

Hey chef. Strange but delicious addition to sushi rice. Add fish sauce. Learned this in a Korean ran japanese style sushi restaurant.
