Imagine doing this on an Amiga, the planar bitmap layout would lend itself really well to tricks like this.

I actually did this back in the day on an Amiga to drive 3 monochrome monitors using analog RGB and I wrote some simple games for that setup. Note that the planar graphics of the Amiga makes writing software much easier. If you use the right color palette every monitor gets its own bitplane so independent output on each monitor becomes easy. You can even create fast animation on each monitor using the blitter. Since the Amiga supports 32 independent colors you can use up to 5 bitplanes, allowing for either one black and white image and two images with 4 levels of grey or two black and white images with an additional image with 8 levels of grey.

That's insane, I didn't know an 8-bit computer could handle so many monitors at once.
The VGA trick was done with a patched XFree86 way back to have three black and white desktops with just one graphics card. You could get Linux to even accept three keyboard and mice and then use that setup with three people on separate desktops. Good enough for writing an eMail and working on some office documents.
