Incidentally, I see nothing but Cat 6 or even Cat 7 almost everywhere here. In response to the many comments: 1. It is simply an observation I make at customer sites in my capacity as an electrician and IT specialist. 2. I am aware that an RJ45 connector does not meet Cat7 certification standards. 3. Even without gigabit internet speeds, I can still achieve higher speeds within the LAN. 4. I know that Cat7 certification is not fully official under the TIA in the US; however, in Europe, Cat7 is certified by ISO/IEC. 5. Please note that ISO/IEC Cat 6A (uppercase 'A') has stricter limits than TIA Cat 6a (lowercase 'a').

Go with Cat 6A for every permanent in-wall run. The cost difference is small compared to the cost of reopening walls later. It gives you reliable 10 GbE, better PoE support, and ensures the house is ready for future networking hardware. Save Cat 5e only for short patch cables, not permanent infrastructure.
I think the most important thing is using conduit where possible so you can change out for whatever new type of wire you might need in the future

Kind of strange to compare Cat5e and Cat6a without considering regular old Cat6. This is a pretty small home, so the range difference (10GbE @ 55m vs 100m) isn't going to be a problem, and you can buy it without shielding to make it even easier to work with. I do agree that 2.5GbE is the way to go for most home networks right now (even my home network which is mostly 10GbE doesn't have any 10GbE client devices), but you build a home with the next couple decades in mind, so Cat6 seems like a solid way to future proof for 10GbE without the hassle of Cat6a while splitting the cost difference from Cat5e.
I worked with Cat6 every day, over time you adapt your technique and develop new tricks and tweak your tools accordingly. Using PASS-THROUGH crimpers and connectors is a night/day difference, it will make your life so much easier.

Saying CAT 5e is easier to work with is a cop out, especially when you don't have walls yet. 6 only has benefits and yeah, some of us use 10G speeds.
Since they're both fiber certified from 5:47 they should be running single-mode fiber in the walls and using SFP switches in each room for ultimate future-proofing!

pro move would be running tubes, so wires can be pulled again without ripping out any walls. In scandinavia we put everything in flexable tubes, used for both electricity and networking. We have stud/wall boxes that these tubes connect to that can have a power outlet or network outlet. If you really want a tech house, you make a utility room where the tubes meet and you can send whatever you want into them. Even added a couple of extra wall boxes and just leave em blank with a cover.
