Think it's probably a traction test. Best way to test how much tires realistically grip is driving uphill, the random obstacles are to see how much traction they have when the motion of the car suddenly changes left to right to see if there's any slippage when the front tires are out of line with the back ones. Either that or they're just fucking around.
Its a test of Traction Vs Torque; You need a lot of torque and power uphill, but with torque comes traction issues and it aggravates the situation if you have to sverve a lot while going uphill on full power.

Pretty sure they are doing a incline emergency swerve tests Like moose test or roll over test, more live and fun for the team. This one is probably to test how well recovery or control through debris uphill, and it could be wet too, so could be traction aid tests

I think you're on the right track. It's either, ADAS / Autonomous Emergency Steering testing, Stability-control calibration, Suspension and chassis tuning, Driver-assistance obstacle recognition. The most interesting part is the steep testing hill. A steep grade introduces variables that don't exist on flat pavement: engine under heavy load AWD torque changes altered weight distribution different suspension geometry reduced forward visibility Notice that from the driver's seat, once they're halfway up the hill, they can't see the far side. That's intentional. It simulates cresting a blind hill where an obstacle suddenly appears. Super interesting video and testing methodology.
