You can make ice cream in the standing mixer! Using the whisk attachment, whip 16 oz of heavy cream until it's light like whipped cream, stir in 1 can of sweetened condensed milk, add your flavorings/mix ins, freeze in a plastic tupperware. My family goes absolutely bananas when I make this.

You can buy a pasta roller and cutter attachment for the kitchen aid! We've used it a few times and the fresh pasta is so yum
I highly recommend checking out some of the kitchenaid attachments if you haven’t already! I had a bad mishap with a cheese grater, so I bought the grating attachment, and it’s incredible! Works on veggies too! you can also shred warm chicken in your stand mixer with the paddle attachment! I use it a lot for dips and other snacks when I’m hosting since it’s great for larger batches
You have to visit Tofino! I live on Vancouver Island a few hours south of Tofino, and I’ll never get tired of it, it’s the most magical place in earth 🫶🏻
I’ve not been into baking lately either, but I find that I still use my kitchen aid to make cooking easier. I’ll shred chicken with my KitchenAid or mix the ingredients for egg bites. I also use it for making protein bites and it makes it so much easier!
