when you breach the roof for the ptz, add some extra runs for cellular back up and starlink. you could have a mini patch panel in a weather proof box.
I know having your house burn down and dealing with all that shit has to be one of the worst things to go through, but this has got to start making it feel a lot better. I'm sure the uptick in viewership for these build vlogs has to be helping out a ton too.

You can use Unifi Design Centre, to plan out where APs should go based on your floorplan and the thickness and material type of walls. It helps simulate the WiFi signal propagation and interference through the house.
Hang the Ethernet from J hooks. Staples can cause issues.

I found 2 parts funny: #1) the electrical store has a nice Spyder display of blades and hole saws. [Too bad you were at the rental house when you needed the hole saw.] #2) the glue can says LOW VOC. My vote is for the doorbell on the frame of the door. It's the natural place to look for people and deliveries. Sorry for being so late to the comments section. Caffeinator out.

Network engineer, and I congratulate you that it took until halfway through this video for me to see something that made me twitch - and I mean that sincerely, because I sort of expected it in the first 3 minutes of the last video. (I'm a perfectionist and this is one of my fields.) Having said that, PLEASE get a proper cable tester and certify all of the PoE runs you did in this video. The staples you were using did not look like they were proper cable staples, so you're taking runs that are destined to pull actual power through them... and hitting them with hammers on pieces of nail. A short in one of those cables could be dangerous, and will certainly be frustrating.
