$3,000 USD for a two and a half year old i7-14700 (non-K), 16gb of DDR4, and NO storage?! That is absolutely insane! That motherboard, ram, and cpu is worth $800 (and $600 of that is the motherboard), so they are literally charging you like $2,200 USD for a CASE.

I've built several proxmox nodes. Once you run out of PCI lanes, and if you don't have a CPU with a integrated graphics, you're SOL for any video out. The only real solution at this point is SSH and Serial. If you have several machines that only have Serial for I/O to configure basic things, a console server becomes a useful piece of machinery. Serial is old, and slow, but is an easy, low performance way to always have I/O to a given machine, and it integrates well with a full rack of appliances when you don't want to commit a full blown KVM.
I built my own server a couple years ago, 25 hotswap SAS bays in a 4U chassis with 512GB of DDR4 and an EPYC 7F52.
