I think these villagers worshipped some kind of Sheep God with how drawn they are to the sheep church. Maybe fWhip can find a way to include it in the lore of the village.
maybe you should leave some work stations in the sheep pen so the villagers stuck there can become shepherds! just for flavor lol. if they're gonna be stuck there, they should fit in.

A hermits shack, there is always that one guy who doesn't want to live in the village with every one else.
i got an idea for the rocks. another dappled forest specific thing. what if the rocks are not man made and are instead built like that due to the eriosion happening in the forest? this could mean bigger rocks near the trees with high coverage and tiny pebbles/ stone buttons around the quarry to show the little bits of fallen rock. and maybe this could lead to a deity. i don't know i'm crazy. but a wind god that the villagers believe in, and thats what the sheeple was originally for? i like theories. i miss matpat.
Would love to see more villagers inside your other, older builds to live up the world. Having NPC's walk around in these large cities would actually make them more interesting.
Lowkey the Villagers in the Watchtowers gave me a Flashback on AoT as if they where smth like the Wall Titans

19:30 Is EXACTLY why I never put blocks next to my fences of sheep or chickens. The foxes and wolves will ALWAYS manage to path into them using the little booster you leave for yourself.. or ledge that you want them up against. Never put your sheep or chickens: - next to a ledge a mob can drop from and not die. -next to a block Basically, if YOU can get in without using a gate, so can a mob and kill all your livestock. I think a carpet is the one exception to these facts.
Foxes getting into your chicken coop is unfortunate but so immersive
