If you use instant charcoal, PLEASE be patient and wait for he coals to ashe over before adding your meat, otherwise you will be tasting lighter fluid in your food.

You can add wood chunks under the crate before you set and light the coals. The wood will smolder from he hot ashes but wont flare up.
Instant charcoal is cool for hot dogs, burgers, simple stuff, but if you have to add more charcoal now you get that instant taste in ya meat that's where it's frown upon
Just some clarification for those that may not understand. The top vent is for “exhaust”. The top vent should always be wide open while cooking. The bottom vent of any charcoal grill is where and how you regulate your air flow, which in turn, is how you get your hotter or cooler temperatures. More oxygen = hotter cooking temps, less oxygen = lower cooking temps. There are circumstances that may require you to close the top vent 1/2 or 3/4’s of the way; colder outdoor temp, adjusting the top vent will help hold the heat in. Maybe a hard steady rain. But again, for the most part the top vent is wide open for the duration of the cook. 🤙🏼🍻
I leave the rack on when the Coles are heating up. Once the fire dies down I clean the rack while it’s hot.
