The best brisket I ever tasted, I made by accident. I lived in Alaska at the time and had a long rectangle one level box grill. I had a whole brisket from Costco...built a fire on one end and put the brisket on the other. I baby sat it for hours, adding charcoal and wood chips, all while drinking beer and whiskey. I passed out and woke up about 5:30 in the morning...immediately thinking, "Oh no! My brisket is a meteor".... It was the best brisket I have ever tasted...from home cooked or restaurants before and after...period. 😀
This could be the best smoker video I’ve ever seen. I’ve had the kettle, offset, and the Joe. Webers are so effing awesome, but I feel like I’ve graduated in my arrogance from DIYer to my Joe. My Kamado Joe is my go to, but I love, love, LOVE my offset, it’s just not tons o fun in these Houston summers.
I have had my New Braunfels side box smoker for 30 years. Call me old fashion but my neighbors pay me to smoke ribs on Labor Day and Memorial Day. Slow and go all day but I enjoy putting in the effort for the result. I really enjoyed your input and time spent educating the smoker enthusiasts. I didn't think any cooking channel could entertain me more; then "Looks like trash in the yard" knocked me off my chair laughing (and I was laughing ... a lot). You just know you can trust a guy sipping Rare Breed neat and dropping strategic f(bombs) with such perfection.
Started out with a gas grill. Saw a cheap electric smoker that was on sale at Lowe’s and thought I would give it a try. Loved the flavor, then bought a Weber kettle, thought that it couldn’t get better than that. Bought a Kamado Joe and just knew that it couldn’t get any better. It was good at everything. Then my wife bought me a gateway drum smoker and thought that was real bbq flavor that I remember from Memphis. Finally, bought an offset smoker and the fire management is just fun! What I kept was the KJ, Gateway Drum and Old Hickory offset. Killer combo. That’s my 8 year journey lol
