Greetings from the province of South Kalimantan, Indonesian Borneo! Glad that you decided to start your Bornean food adventure here in Banjarmasin, my hometown. Yes, Indonesia is a Muslim-majority country, but NOT an Islamic country. Even in South Kalimantan, the province with the most Islamic influence out of the five Indonesian provinces of the island, you can still find pork and local alcohol. 21:10 Indonesia DO NOT practice islamic law as a nation (except for Aceh). That being said, the fact that majority of indonesian (over 80%) is muslim and its also the largest muslim population in the world will eventually reflected onto a lot of things like lack of pork and booze, doesn't mean they don't exist or outlawed in any means.
Indonesia's Kalimantan is still so underexplored in YouTube compared to Sulawesi, Sumatra, and of course Java, this is nice!

Even in the same Nation, between different province in Kalimantan (Borneo) is very different to each other. The South (where Sonny at) is the home of the Banjar, identical with river life. People think of floating market when thinking of Banjarmasin. The central, the Heartland of the Dayaks. This is THE place of the Dayaks. A very rural, more nature based people. The East, the more metropolitan one. The Jewel of the Borneo Island, this is where most of the resource extraction is conducted. If I remember correctly, also the home of the Kutai, a very ancient people for Indonesian standard, especially since Kutai is the oldest known kingdom in the whole of Indonesia. Then the west. The weirdest one. Actually probably the most unique one imo. This is where a high concentration of Chinese people reside (mostly urban) . At some point there is actually a Chinese republic here too. Theres the usual Dayaks, and Banjar. But the culture is unique because of that Chinese twist. Lastly the North. Basically the extension of the East. Tbh I don't really know whats so unique here that differentiate it from the East. I just see it as a rural East Kalimantan.
