I’ve cooked thousands of steaks in my lifetime. This man right here knows wtf he’s doing. Might be one of the best steak videos I’ve seen.

Chef Marc Forgione is one of the nicest and coolest cook guys out there. I had the pleasure to make pasta for one of his restaurants for almost a year.

Virgin olive oil (which is most likely what the Chef used here) is used for cooking because it has a higher smoke point than extra virgin olive oil which is used for salads and dressings. A lot of people aren't actually aware of the difference and use extra virgin olive oil for both cooking and dressings.

"Rest for as long as we cooked it." Ive been making steak about once a week for a little over a year. I wanted to get really good at it. Resting is what took my steaks from a C- to a B+. It is THE most critical step. He mentions it so casually, but trust me... Resting for a full 6 or 8 minutes will take your steak game up two notches.

This men makes me miss my Tuscan life. We have this wonderful lean and ultra soft stake called Chianina in Florence, and what many tourist get wrong is that they trust the web thinking the famous spot still hold the best meat, but there are places that are umbelievable but only locals know. The bone marrow is absolutely genious! Just by looking at it my mouth is watering! If you know what you are doing, you don't need any cream, reduction or whatever. The steak is juicy itself!
