I just made the cauli dish for dinner and img it’s a taste sensation! Why have I been vegan for a decade and this is the first time I am roasting my Medjoolies?! They are the *perfect* sweet jammy flavour nugget to counter the salty, a saw court and crunchy elements. I’m already extremely excited about wishing leftovers into a wrap for lunch tomorrow 🤤

The curried tofu recipe was 10/10!! My husband said it was the best thing I’ve ever made…which actually is sad because I’ve made millions of meals with and without recipes 😂 so happy to see some easier recipes like this with 1-2 sheet pans and no equipment. I was even able to make it with a sick toddler!
