Butter Mochi Servings: 8 pieces - 30g unsalted butter (~2 tbsp, room temp) -Plus extra for greasing the muffin pan - 200ml whole milk (room temp) - 1 egg (room temp) - 60g white sugar - 1 tsp vanilla extract - 1/2 tsp salt - 160g glutinous rice flour Preheat your oven to 365 F and set the rack to the middle. Grease your muffin pan generously with butter. In a saucepot over low heat, add butter and milk. Stir until all the butter has melted. Do not let the milk curdle. Take off the heat and cool slightly. Over a large bowl, add the egg, white sugar, vanilla extract and salt. Mix together before adding the milk-butter mixture. Make sure it won’t cook the egg from the mixture being too hot. Sift in glutinous rice flour and mix until combined. Strain the mixture to remove any clumps. Pour the batter in the greased muffin pan until it is ⅔ or ¾ full. Do not overfill. Bake at 365 F for 30 minutes. Cool and serve.

This isn’t Shanghai butter mochi, it’s Hawaiian butter mochi. The whole thing was basically a forced viral marketing stunt, and there’s no clear origin behind it. Koreans are aware of that too, so stop twisting the narrative. It feels like Chinese are trying to claim everything as their own. Just leave Koreans out of this. I don’t want to be used as a shield in this argument.
