Easy Poricha Kozhi Biryani (Fried Chicken Biryani) 🍗🔥 Craving a rich, flavour-packed biryani? Here’s a simple homemade version with exact measurements! ✨ Marination: 1 whole chicken (cut into biryani-size pieces) 1½ tbsp chilli powder (Kashmiri chilli powder) 2–3 tbsp yoghurt 1 tbsp vinegar Juice of ½ lemon 2–3 tbsp cornflour 1 tbsp all-purpose flour (maida) Salt to taste 1 egg Mix everything well, marinate and deep fry the chicken. Keep aside. ✨ Rice: In a large pot, add 3 tbsp ghee Whole spices: 1 cinnamon stick, 3–4 cloves, 2–3 cardamom, ½ tsp cumin seeds, ½ tsp fennel seeds Add 1½ tbsp ginger-garlic-green chilli paste Add 5–6 cups soaked jeerakashala rice Pour hot water (about ½ inch above rice level) Cook on high till boiling, then low flame till rice is done. Set aside. ✨ Masala: In the same pot, add: 1 tbsp ghee + 2–3 tbsp leftover frying oil 2 tbsp ginger-garlic-green chilli paste 5–10 onions (sliced) + salt → sauté till golden 1½ tomatoes (sliced) → cook well Add: 1 tsp chilli powder ½ tsp turmeric powder 2 tbsp biryani masala / garam masala Mix and roast well. Add fried chicken + little water mixed with yoghurt. Cover and cook 5–10 mins till a rich gravy forms. Finish with chopped mint & coriander leaves 🌿 ✨ Layering: Layer rice over masala Top with fried onions + mint + coriander Add turmeric milk (for colour) Drizzle 1 tsp ghee Repeat layers. Cover with foil + lid and cook on low flame (dum) for 30 mins. Rest 10 mins before serving. Serve hot with raita, salad or chutney 😍
