Did you notice the difference in appearance between the two types of scone? This is because of the extra handling in combining the sultanas into the mixture. This creates a denser scone. This can be avoided by gently incorporating the sultanas with the knife. Also, never roll the dough with a rolling pin and do not scrape up after cutting and never add more flour. The less handling, the lighter the scone. In Scotland, we usually don't use cutters. We shape the dough into large rounds and score deeply into quarters. This produces the lightest scones. And yes, that is an excessive amount of baking powder!

🏴 Scots don’t usually put eggs in scones - I was taught to make them by my Scottish grandmother and now I’m a granny myself. In the old days they were something very cheap to make and I bet they used any type of fat they had, not necessarily butter. 🏴

I use grated, cold unsalted butter. I also recommend putting the scones on a plate and placing them the fridge for 20 or 30 minutes before baking.
