I find 350gms of water too much. I would suggest a beginner try 320 gms first. Low hydration loaves are easier to handle.

Wouldn’t an autolyse be an easy step to add at the beginning? Just flour and water, rest for 30min-1h and then incorporate starter and salt. It’s always made a difference in my dough’s strength and I end up needing less stretch and folds
You said 450° but silicone is only safe to 420°.
Does the bulk time in your chart include the 2 1/2 hours of resting and stretch and folds or does it start after the last stretch and fold?

I just add 1.5 tablespoon of wheat gluten to the mix and skip 2.5 hours of stretch and folds. Just add a few minutes of kneeding at the beginning, and it’s golden. It has great oven spring and the crumb is amazing too.
