The look on that uncle's face at the 12.5 minute mark said it all, that look of "HOLY CRAP!" Medium rare is the way to go with steak, dear--any of us Texans will tell you the pinker the better! If ever I go to Singapore, I will add this steak house to my list of places to eat at that are not hawker stalls; it looks really clean and neat and comfy, with a friendly atmosphere. You're making me want to go there even more now!
