Chicago was the meat packing center of the US for decades and in the old days hot dogs were stored and shipped in barrels of brine where the meat often went bad causing many people to find the meat untrustworthy. Some vendors across the country started using ketchup to mask that fact. So local vendors started selling their all-beef dogs without ketchup as a point of pride and to prove they were quality that didn't need disguises. In 1929, Chicagoan Oscar Mayer invented packaged hot dogs in a plastic wrapper so people could see they were fresh. Hence, it was a badge of quality to not use ketchup on hot dogs and has remained so ever since. Some local foodies eschew ketchup because it is too sweet, and I think that's why fresh tomatoes are used (they call one with all the toppings "dragging it through the garden") in order to give the tomato flavor without all the sugar found in ketchup. It's called a Maxwell Street Polish because a Macedonian immigrant here names Jimmy Stefanovic invented it in the Maxwell Street Market vicinity in the 1930'a and used a polish sausage with onions and mustard which became his signature product. I live near a Portillo's and while I love their chocolate cake shakes, I've taken to making my own at home.

The Polish is a sausage, not a hot dog. Both the Polish and the Chicago dog are the best iterations of their own catagories
Man I know Olly is the comedic relief but he seems like literally one of the most well read people on the internet at times. He has the most random knowledge and ability to connect things.
Portillo’s is one of the few touristy foods that we Chicagoans actually eat.

I'm from chicago, a lot of us prefer the polish. The onions really make it great, sometimes you don't want it too dragged through the garden, the polish is more meat centric.

My favorite way to eat a beef sandwich is "dry with juice" on the side so the sandwich isn't too soggy by the time I get home. When i make it at home i just use a spoon to wet the inside of the bread before adding the meat, cheese, and peppers.
