If you're like me and soaking, hing and kombu doesn’t solve the fart problem, try SLIGHTLY sprouting them. Rinse and drain twice a day for about 24–36 hours, just until you see a tiny 1–2mm sprout — barely anything. Not making "bean sprouts". That small amount of sprouting makes them much easier to digest (it’s the only thing that makes me "fart-free"), and they also cook way faster afterward, so keep an eye not to overcook!

Excellent tutorial on how to cook beans. Mentioning the baking soda trick to soften extra hard beans is definitely a plus! I just can't bring myself to pay the extra $$ for Rancho Gordo beans, so buying "regular" beans from the grocery store & most of the time they're extra hard, the baking soda definitely helps. Thanks for also mentioning kombu, which helps with digestion & adds extra minerals to the dish. I'm definitely going to try the asafetida one day when I'm feeling extra brave!

I have been cooking beans for about 50 years and then about 35 years ago I did a workshop on cooking beans and vegetarian cooking and that's where I learnt to use Kombu in the cooking water. I always pick over, wash and drain then soak the beans for 8 hours or overnight then drain and rinse them again. I sometimes sprout the beans before cooking them. I was never taught to use salt to soak or cook the beans as it was thought to toughen them, so it is different for me to see you do this. I guess because I always use Kombu when cooking beans, I don't think to use salt until I add vegetable broth as that has salt in it. I always scoop off the froth as the beans are cooking as I was taught that it helps digestion to remove this, not sure if this is true or just what people used to think. Then I cook onions and garlic and add the cooked beans and any vegetables or I add the onions, garlic and vegetables to the beans. It was interesting to see what you do.
You remind me of my grandma!!!! Whenever we went to her house, we would eat her beans, and add them to the dish we brought! Awesome

I would really like to see how you would cook beans in an Instant Pot. I don’t have the time or patience for the stovetop method.
I do a lot of canning, and one thing I always have on my shelf are canned beans. I buy bulk 25lb bags of various dried beans and run a batch through the pressure canner when I have time. Then I always have cooked ready-to-go beans no matter how busy I am.
For people who don't have enough time, the pressuree cooker is a cheat code.
Add a Pot of Greens with your Pot of Beans and you're in business! Yummy! Beans freeze well too.
I like to add a cap full of liquid smoke. I usually add some maple syrup too, maybe a tablespoon.
My husband has ARFID (disorder that makes eating difficult, he can’t have many foods) and he LOVED this recipe. He said it was the best thing I’ve ever made. I didn’t know how you could make a pot of beans luxurious but boy did you. Will be adding to the weekly rotation for sure.
