Important correction: The rapeseed oil used in Traditional Chinese cooking IS NOT CANOLA OIL. It's from an entirely different species of Rapeseed called Semi-Winter Rapeseed. When processed into cooking oil, it's called "Caiziyou" (菜籽油). Caiziyou can be hard to find and pretty much illegal to buy in stores in Canada and the USA due to "Caiziyou" containing high amounts of Erucic Acid which causes spikes in cholesterol levels. As for the Doubanjiang, make sure you get Pixian Doubanjiang!

The oil uncle Wang Gang is using isn't really what we know as "canola oil" though. He is using caiziyou which is roasted unrefined canola oil which has a lot of flavour. The canola oil in most shops (in UK, USA etc) is highly refined and pretty much flavourless.
