My Jollof Rice recipe Ingredients / Seasoning / Recipe * Basmati rice * Tomatoes * Bell peppers * Fresh thyme * Onions * Chicken * Tomato purée * Salt * Maggi * Curry powder * Chicken seasoning * Ginger * Garlic * Cameroon pepper * Paprika * Jollof seasoning powder * Bay leaves * Scotch bonnet * Vegetable oil * Plantain (for serving) Method 1. Season the Chicken Season your chicken with thyme, salt, paprika, Cameroon pepper, chicken seasoning, garlic, ginger, Maggi, and onions. Add 1 cup of water and let it cook until tender. 2. Roast the Vegetables Roast your bell peppers, tomatoes, onions, and fresh thyme in the oven at 220°C for 25–30 minutes. 3. Blend the Sauce Blend the roasted bell peppers and tomatoes together, then add your scotch bonnets and blend until smooth. 4. Prepare the Stew Base In a pot, heat some oil and fry 2 chopped onions with curry powder and thyme for about 3 minutes. Add the tomato purée and fry for about 10 minutes until the colour deepens. Pour in the blended tomato and pepper mix, then add your seasonings: * Salt * Maggi * Curry powder * Paprika * Jollof seasoning powder * Chicken seasoning Add the chicken stock from earlier and stir well. Drop in your bay leaves. 5. Add the Rice Add 3 cups of washed basmati rice and 2 cups of water. Stir everything together. Cover the pot with kitchen foil first, then place the lid on top. 6. Cook the Jollof Rice Cook on low heat for about 25 minutes. 7. Bonus Tip ✨ If the rice is still slightly hard after 25 minutes, add another sheet of clean foil, cover again, and continue cooking on low heat until soft. Serve with your fried chicken and sweet plantain. I hope this helps ☺️
