I’ve pretty much cancelled everything and picked up some hobbies that weren’t on screens. I’ll still watch movies and TV but only at friends and families houses. Only regret is I didn’t do this sooner. I’ve wasted a large portion of my life collecting, ripping, transcoding, building out NAS for streaming just for Hollywood slop (mostly).
tailscale will also give you a domain name into your device. itll help with the reverse proxy and static ip problem.

Used portainer for years and recently switched to Dockhand. Definitely a more user friendly experience and updates your compose files for you instead of saving them to portainer internally
I'll just mention Emby as another local media option. Personally I find it's UI prettier than Jellyfin and that it handles collections better. It is free with some things behind a paywall (which I don't use), but cheaper than Plex. I haven't tried Plex, but from what I've seen, it's like Plex is the most polished but closed and available in tons of TVs, while Jellyfin is the least polished and with most third party stuff but less available on TVs, and Emby is in the middle.
Raspberry pi 5, ssd, samba share, tailscale, jellyfin and I can watch movies from everywhere.
