Note that Obsidian uses standard markdown to avoid vendor lock in. My concern with Logseq, although FOSS, uses a tailored Logseq version of markdown syntax. This works well within the app but if you ever choose to leave Logseq, your notes will not be fully legible in other markdown apps. This is not the case with Obsidian because it uses standard markdown which is fully readable by any other markdown app. Hope this helps

Heads up about Proton Mail, the free tier only allows one measly filter (meaning, lets say you want to auto-organize mails from XYZ into a folder you can only do it once for XYZ) but it's probably the best privacy free email now.
There is a very big issue in your setup with using unbound. Using unbound as a local DNS resolver does not mean that the dns is resoled locally. your unbound queries the root servers. however this query is plain text (not encrypted) meaning you isp can (and will!!) log, monetise and sell this data. It is much safer to use an open source dns server (in denmark eg. Uncensored DNS that support dns over hhtps which is encrypted)

Affine user here ! I would 100% recommend it. I use it for all of my coursework and to organize and plan personal projects (which I can keep in neat separate workspaces), the blend of infinite whiteboard and traditional note taking is the only thing that works for me. It's regularly updated and the team is still adding more features, the free plan is the best I've seen in this type of app, especially if you self host it, and generally has anything you could want: cross platform, optional could syncing, an ai if you're into that (or you can disable it and never have to see again), real time collaboration, obsidian-like folder structure and backlinks, All notion features but better .... the only thing I find is missing is built in pdf reading / annotation

Davinci resolve is very good for video editing. Not technically open source but free to use and locally stored
